Grady does the grinding, the handle work, and the finishing himself, which is why no two come out identical.\u003c\/p\u003e\u003ch3\u003eO1 Tool Steel\u003c\/h3\u003e\u003cp\u003eO1 is a carbon tool steel that takes a keen edge and comes back sharp with very little effort on a stone. It is not stainless, so it will patina with use and wants to be kept dry and waxed.
