The micarta
The brown micarta is natural, and that is the appeal. Micarta soaks up hand oils and darkens with carry, so the scales slowly take on a patina specific to how you use the knife. Two of these will not look the same after a year in the pocket, and it grips well wet or dry.
CruWear
CPM CruWear is a tough tool steel with strong edge retention. It is semi-stainless, so it holds up better than a straight carbon steel while still taking on some character over time. Wipe it down now and then and it stays happy.
